He gave me some hints on a garden, showed me a weakness in some duct work and kicked J-Bird's buns at a game of Sorry! It was awesome to see him take on the boys!
In preparation for his visit I knew I had to make a lo-so dinner. I have been doing a TON of research on Obe Wan's new diet. I have several pins on Pinterest. I knew I had pork chops defrosted, so it was only a matter of finding something I thought he would eat.....

You need several spices, but NO SALT! I was impressed with the seasonings. I didn't realize you don't need salt. LOL!
Preheat your oven to 425. Nice & HOT!
The recipe calls for 4 bone-in 1/2" cut Pork Chops. I had 7 1/4" bone out. I time & a halfed my spices to accommodate.

- 3 T parsley flakes
- 1 t dried marjoram leaves
- 1 t dried thyme leaves (I didn't have this, so I subbed in ground thyme)
- 1/2 t garlic salt (WATCH the sodium levels on this bad boy. The recipe called for 1.5 t and I said NO WAY!)
- 1 t of ground pepper
Mix all of that goodness in a small bowl! Take out your chops, spray them liberally with Olive Oil. (Did you know oils do not have sodium in them? It is only when they are heated and with the chemical reaction do they help create sodium.) Sprinkle the seasoning on both sides of the chop. Place them in the corners of a JELLY ROLL PAN!
Select some veggies! I cut into chunks:
- 4 new potatoes
- 1 sweet potato
- 1 green pepper
- 1 red onion
- 1/2 package of fresh mushrooms
TAKE THE POTATOES and put them on a microwave safe plate and 'nuk' them for 5 minutes.
Put the above in a bowl. Spray with the Olive Oil and sprinkle the rest of the seasonings on the veggies. Put the veggies in the center of the pan. I had overflow, so I just covered my pork chops with the remains.
Put the Pan of goodness in the oven! Let it bake for 15 minutes then flip your chops and stir the veggies. Cook another 10 minutes. While this last ten minutes is going on, cut up your tomato into eight chunks. Remove your pan, place the tomato on top of the pork chops. Cook another 10 minutes and you should be golden! (Or at least the chops should be!)
I found this recipe on a Blog and she found it on Betty Crocker. Based on the comments on the recipe, I tweaked it to the above. Obe Wan enjoyed the meat and the potatoes. He could do without the other stuff. Wichita Uncle said it was good and the seasoning was good considering the absence of salt.
